Happy Wednesday, y’all! Time for another What’s Up Wednesday with Shay and Sheaffer!

What We’re Eating…
Nothing revolutionary, haha! On Monday, we had leftovers from the weekend (I made PW lasagna on Friday night and PW beef enchiladas on Saturday night). On Tuesday, I grilled some marinated chicken on our indoor grill, and we had steamed rice, black eyed peas, and a salad with it. And then a trip to McD’s because we had talked about it earlier and couldn’t get rid of the craving. (Livy girl inhaled some nuggets, haha!). Tonight we are having burgers, and then I’ve got sausage, fried shrimp, and brisket on the menu for the rest of the week.
Last week, we tried the Pioneer Woman cast iron skillet pizza recipe, and it was so good, and so easy!

What I’m Reminiscing About…
I guess you could call it reminiscing even though it happened this month, but do y’all remember that time that TEXAS TECH WENT TO THE NCAA FINALS???? I know, it was crazy! We stayed up so late watching the finals game only to be heartbroken, but it was so awesome. I love Tech with all my heart and am so proud to be an alumni but, let’s be honest, we don’t really have a sports claim to fame. So, this was super exciting to actually do really well in something! #gunsup #wreckemtech
What I’m Loving…
Spring time in Texas means… Bluebonnet pictures! And Livy was old enough to get some REALLY GOOD ones this year that we love!! We took her to some abandoned railroad tracks here in town and used the little wooden chair from when I was her age and Gran knocked it out of the park.
What I’ve Been Up To…
Steven actually had 3 weekends off in a row this month (which very rarely happens, and only happened because he had very little weekend time off for the weeks before that), so we’ve gotten to have some fun. The weekend before this, I worked my turn in the church nursery during service, and then we went to celebrate Steven’s last turn on ward service with dinner at Pappadeaux and a new Henry rifle.
We kept it low key on the first weekend- we worked around the house on Saturday, and then my parents visited on Sunday. On the second weekend, Steven actually had Wednesday through the weekend off, so he took care of normal people appointments (optometrist, etc.) during the week, then we headed out Friday afternoon for my parents’ house. We stayed with them overnight and headed up to Abilene to see Steven’s family on Saturday afternoon. The weather was pretty crummy on Saturday so there wasn’t much we could do, but it was better on Sunday and we got to play a little. Livy loves driving the UTV! We stopped back by my parents’ that afternoon to pick up Boudreaux (he stayed at Grammy and Grandpa’s house), and then made it home fairly early (like 7 ish!).
And the third weekend was Easter weekend! Steven’s parents and Granny visited on their way through to a vacation. Our church had a combined service Sunday morning with another congregation in town and it was so good! We stopped back by the railroad tracks on our way home and got an updated family picture.

What I’m Dreading…
I’m not really dreading it, so to speak, but I’m looking forward to the end of the next four weeks. Steven is rotating on the medical ICU for the next four weeks, and those are long, hard days (he leaves about 5:30 to get there by 6 and gets home between 6:30-7). He keeps a good attitude, but when you leave that early and get home that late, it doesn’t feel like much time for anything much more than work. But, this is his last more demanding rotation before the end of third year/ residency and the start of fellowship!
What I’ve Been Working On…
We’ve just been rolling along in our routine around here! We finished up our last Alliance bake sale for the year the week of Easter, so my bake sale co-chair duties are officially finished. Over the year through the six sales, we made about $6300 for our annual group donation for the children’s hospital here in town, so we were pretty pumped with our participation for the year!

What I’m Excited About…
Livy girl is walking!!
What I’m Watching/ Reading…
We’ve been watching the show Wrecked on Hulu the last week or two and it’s pretty funny. There are only three seasons, so we’ll probably burn through it pretty fast, but we’ll enjoy it while it lasts, haha!
I think on the last What’s Update, I mentioned that Livy and I were going to the library for story time and I thought I might pick up some books. I grabbed When Life Gives You Lululemons by Lauren Weisburger and it was so good! That first weekend Steven had off when we stayed home, I actually sat and read it all in one sitting that afternoon because it rained all day. I’m thinking we might go back to story time tomorrow and I have a list of new books to grab while I’m there.
What I’m Listening To…
Current Fave Podcast Episodes:
–That Sounds Fun with Annie F. Downs
- interview with Trudy Cathy White– this will make you a better human being, I swear. She is one of those higher level people that just make you feel like you can be better. She is super encouraging and uplifting, and I love every minute of this interview!
- interview with Ginna Claire Mason and Mary Kate Morrissey– this one is older, but so good! At the time, Ginna Claire and Mary Kate were playing Glinda and Elphaba in the touring production of Wicked, but as of a few weeks ago, Ginna Claire is now the Broadway Glinda!
What I’m Wearing…
I searched all last spring for a pair of overalls that I liked, but could never pull the trigger on any that I liked for the price I was willing to pay. On a whim a few weeks ago, I searched at Target and found this pair for a very reasonable price, and decided to try them. They are really cute and comfy! They’re little fitted through the waist, but like a boyfriend jean through the legs. I’d say they are a winner! (And overalls are pretty much my favorite thing to dress Livy in, so now we can be matching!)
What I’m Doing This Weekend…
Honestly? I’m not super sure, haha! It will depend on if Steven gets a day off this weekend or not. I’d like to get caught up on ironing and other housework, but if something fun comes up I wouldn’t be opposed to that either, haha! 🙂
What I’m Looking Forward To Next Month…
My younger brother is graduating from Tech in mid May and then we are going on our annual lake trip with Steven’s family over Memorial Day and the next week.
What Else is New…
We’ve been spring dog training at the park!
And working on our sass face!
Perfecting our dance moves!
And looking like a sweet bunny for Easter!
Lots of modeling our new clothes 😉
And last but not least, Livy got to hang out with Dad for a day while he was off, but I went in to the office, and then, as always, she “helped” me chart later that week while Dad mowed the backyard. Life is so fun with this angel!
