On the Easy Side– Microwave Potatoes

Does anyone else struggle sometimes with what to have with your main dish? I feel like I rotate the same sides over and over, so when I come across a new one that we like, I have to remind myself to throw it into the rotation, otherwise I forget about it. Like microwave potatoes!

Now, microwave potatoes are not really something new for us. My mother-in-law invented these, and Steven grew up eating them and loving them. But, they weren’t something that I’ve cooked for years, so I sometimes forget they are in my arsenal! They couldn’t be more easy and are completely delicious!

 

You will need: 

  • Potatoes
    • The more you want to eat, the more you need to cook. For this meal, I did 3 medium sized russet potatoes and that was more than plenty for the two of us. I typically gauge how many people I’m cooking for and how big my potatoes are and go from there.
  • Mrs. Dash Seasoning
  • Cooking Spray
  • Butter (optional)
  • Microwave safe casserole dish with lid (not optional)
    • These are surprisingly hard to find! Mine is Corningware, and I have a few others that are similar that are also Corningware but just different shapes or sizes. If you don’t own one, or can’t find one, you can use a microwave safe bowl with a plate over the top (this is what we had to do the first time we made them by ourselves a few years ago and didn’t have our Corningware yet).

 

Step One: 

Wash and peel your potatoes.

Step Two: 

Once they are peeled, cut the potatoes into small chunks and place into your casserole dish.  Once you have a layer of potatoes, spray them with cooking spray and sprinkle on Mrs. Dash seasoning. Continue this layering until all your potatoes are in the dish, and covered in cooking spray and Mrs. Dash.

Optional: For a healthier version, you can stop there. For a less healthy, and equally delicious version, add slices of butter around your casserole dish. I like them either way, but Steven is a microwave potatoes savant and can tell if I don’t put the butter in, so I always do.

Step Three: 

Put the lid on your dish and put in the microwave for 15-25 minutes. For the three medium sized potatoes, I cooked them for 20 minutes. Some of this is trial and error, but as a rule, the more potatoes you are trying to cook, the longer you want to cook them. If you are unsure, start with a shorter time, and keep going until they are fork tender.
